I saw Man vs Food and this restaurant in Puerto Rico soaked chicken in sofrito for 2 days before cooking?
I was inspired, so I made some sofrito and have it marinating some quarters. Should I grill them, bake them or broil them. Also, I should probably discard the sofrito before cooking, right?

Grilled sounds excellent…and yes, throw out the marinade… unless you use it for basting the chicken over the grill, then throw it away.

i agree with first answer grilling would be good to me personally and yup.
