How can i cook a chicken so the bone is so soft is eatable too?

Last week i went to a restaurant where not only the meat but bone was very soft too… i was holding it in my hand and it broke. I ate the bone bc of how many nutrients the bone marrow has (specially now that i’m pregnant). Someone said a crockpot but i’ve never seen it produce an eatable bone… just really tender meat. Is there another way to cook a chicken or a different thing i need to do in a crockpot?

What technique is used to tenderize meat in Chinese cooking?

A friend once told me that the only thing they do differently is be more careful about cutting with the grain of the meat, but that alone does not result in the kind of tender meat that I encounter in Chinese restaurants… what’s the secret?
